2 pounds beets, peeled and cubed

1 liter vodka

Directions

Place beets in a sealable container. Pour vodka over beets, seal container, and shake vigorously. Place container in a cool, dark place and store for 3 days, shaking twice per day.

Be careful when preparing, as beet juice can stain. Around here it's pretty much held that beet vodka makes a superior Bloody Mary.
