1 (15 ounce) can garbanzo beans (chickpeas), drained

1 (15 ounce) can black beans, drained

2 ripe tomatoes, chopped

½ onion, chopped

½ cup chopped fresh flat-leaf parsley

3 tablespoons extra-virgin olive oil

1 lemon, juiced

1 clove garlic, minced

1 pinch salt and fresh coarsely ground black pepper to taste (Optional)

Directions

Combine garbanzo beans, black beans, tomatoes, onion, parsley, olive oil, lemon juice, garlic, salt, and pepper together in a bowl. Allow to sit for flavors to blend, 15 to 30 minutes.

Best served at room temperature but will keep for days in the refrigerator.

Two tablespoons bottled lemon juice can replace the freshly squeezed lemon if desired.
