A quick and easy recipe that tastes fantastic! I used cod but you can really use anything you want.Ingredients | Poached Fish Dishes2 zucchini, sliced1 large potato, sliced1 bunch green onions, chopped2 large carrots, sliced4 (4 ounce) fillets cod1 tablespoon dried dill weed2 roma (plum) tomatoes, sliced1 fresh red chile pepper, seeded and chopped1 tablespoon olive oil1 tablespoon fresh lemon juicesea salt to tastecoarsely ground black pepper to tasteDirectionsPreheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x12 inch baking dish.In the baking dish, arrange the zucchini, potato, green onions, and carrots. Place the cod on top of the vegetables, and sprinkle with dill. Arrange tomato slices over the cod, and sprinkle with red chile pepper.
