A bright, flavorful array of Mediterranean ingredients!Ingredients | Turmeric Orzo Salad1 cup uncooked orzo pasta2 tablespoons extra virgin olive oil, divided1 pound ground lamb2 cloves garlic, chopped1 tablespoon ground coriandersalt and pepper to taste4 cups fresh spinach leaves, chopped3 tomatoes, seeded and chopped1 lemon, zested and juiced¼ cup chopped fresh mint leaves¼ cup chopped fresh parsley5 green onions, chopped1 cup crumbled feta cheeseDirectionsBring a pot of lightly salted water to a boil. Add orzo pasta, cook for 5 minutes, or until al dente. Drain.Heat 1 tablespoon olive oil in a skillet over medium heat. Place the lamb and garlic in the skillet.
